The best use of leftovers ever!! From a left over roast lamb we whipped up this baby. You can use any left over meat or cook with meat you have on hand. So easy and sooooo tasty.
Ingredients Leftover lamb, chopped into cubes Bay leaf Rosemary 2-3 tbsp olive oil 1/2 tsp sea salt 2 garlic cloves Mint yoghurt (Greek yoghurt with some chopped mint added) Hummus (check out my previous post on how to make from scratch- its worth the extra 5 minutes) Red cabbage, thinly sliced Lettuce, thinly sliced Any other veggies you have on hand. I used roasted red onion and capsicum. But you could use grated carrot, tomato, grilled aubergine etc. Flatbreads - see note below for how to make yourself
Instructions 1. Crush bay leaf, rosemary, garlic and salt in a pestle and mortar. If you dont have one use the end of a rolling pin and steel bowl. Crush until it resembles a paste. Then add olive oil and mix. Mix through meat and then cook until heated through. 2. Assemble flat breads with meat, veggies, hummus and mint yoghurt and you are ready for a taste sensation!
Note. You can make your own flatbreads in just a few minutes too. To make place 350g of flour, 350g of yoghurt, 3 tsp of baking powder in bowl. Mix until combined. Dust a clean work space with some flour and then tip out the dough. Knead for minute, or just long enough to bring all together. Roll into log and cut into 6 balls. Roll each ball out till 5mm thick. Cook on hot grill plate for minute each side- or until just cooked and brown. EASY.
