Aunty Ljerka's Zucchini, Potato and Pumpkin Seed Soup

My Aunty is a beautiful cook and enjoys feeding us until we can hardly move! Today she whipped up this gorgeous soup. I have to share her recipe so that you guys can keep warm at home.

Ingredients 1 onion diced olive oil 3 biggish zucchinis, chopped 2-3 small potatoes, peeled and chopped Water Pumpkin seed oil salt and pepper.


Instructions 1. In large pot, cook onion in olive oil until soft. 2. Add in potatoes and zucchini and cover with water. Bring to boil and then reduce heat to simmer. Cook until potatoes are soft. 3. Remove from heat and then blend until smooth. Add 2 tbsp of pumpkin seed oil and mix. 4. Serve with extra drizzle of pumpkin seed oil.


Nb. You can get pumpkin seed oil in some supermarkets, and also in speciality food stores. I love the flavour of this oil as the pumpkin seeds are first roasted and then the oil is extracted to give scrummy flavour. Pumpkin seeds are rich in antioxidants, iron, zinc, magnesium and many other nutrients. Worth splashing out and getting a bottle. I also love adding to my skincare
