Baked Parmesan Zucchini

Zucchini and parmesan cheese. It’s a match made in heaven!

Ingredients 4 zucchini, quartered lengthwise 1/4 cup grated Parmesan 6 tbsp chopped fresh herbs (I used thyme, parsley and basil) 1/2 teaspoon dried oregano Salt and pepper 2 tbsp olive oil


Instructions 1. Preheat oven to 180 degrees C 2. Line a baking dish with baking paper. Place zucchini in baking dish and drizzle with olive oil. 3. Mix remaining ingredients, and then sprinkle over zucchini 4. Place into oven and bake until tender, about 15 minutes. I also grill mine (at end) for 2-3 mins to get extra crispy.

Serve immediately, garnished with parsley.

Tip: If you don't have fresh herbs replace with dried herbs. Also adding crushed garlic would be yummy.
