Beetroot and Halloumi Bake

Now that I have dusted off the old spiraliser I am on a roll! This little concoction was a winner! The house smells incredible while its baking too!

Ingredients 1 cup cherry tomatoes, halved 2 beetroot, spriralised 1 red onion, spiralised 1/2 cup black kalamata olives, pitted 3 large garlic cloves, minced 1 tsp dried oregano 2 tbsp of chopped parsley 3 tsp of red wine vinegar 2 tbsp extra virgin olive oil 200 grams of halloumi or feta


Instructions 1. Preheat oven to Bake 200C 2. In large bowl, mix all the ingredients except the cheese 3. Place the block of halloumi or feta in the centre of large oven proof dish. Top with the beetroot mix. Cover with foil and bake for 20-40 mins- until the beetroot wilts.

Serve hot, garnished with some extra parsley.
