I had a craving for broccoli that’s crunchy and tasty like you always get at restaurants. So I called my bestie who has owned many a restaurant for the low down... thanks Nicola!
Tip number one.. bring water to boil before adding broccoli. This will keep broccoli crunchy. Add broccoli for 3 or 4 mins.
Tip number two...drain water and add broccoli to cold or iced water for a minute. Drain again. This keeps the colour nice and bright.
Tip number three... add butter to fry pan and then fry broccoli for couple of minutes with generous sprinkle of S&P. To get real fancy add some sliced almonds.
