Crunchy Potato Salad

You will never make another potato salad again. This is it!!!


  • 500-700g potatoes

  • Olive oil

  • Salt & Pepper

  • Paprika

  • 1 Cucumber , diced

  • 1 Capsicum, chopped

  • 1 Red onion, diced

  • Dill or parsley

Dressing Ingredients

  • 5 tbsp yoghurt

  • 2 tbsp mayo

  • 1 tbsp mustard

  • 1/2 lemon juice

  • Salt and pepper


  1. Boil potatoes (whole) until cooked. Then placce on baking tray and squash them with a glass or jar until they are flattened. Sprinkle with salt, pepper and paprika. Drizzle with olive oil and bake 180C for 20 mins.

  2. Mix all the dressing ingredients in salad bowl

  3. Add chopped veggies and dill to dressing and mix..

  4. Once potatoes are crispy chop and mix in with veggies and dressing.
