Guilt Free Tacos

I made this for the first time the other night and was seriously impressed. Not only did I have dinner ready in 20 minutes from start to finish, but I had accidentally made something quite delicious. What was suppose to be burger buns ended up being taco wraps. Best mistake ever. So yum. Hope you enjoy as much as my family did.

Ingredients for tacos 4 eggs 1/4 C tapioca flour 1/4 C almond flour (or use seed flour to be nut free) 2 tbsp coconut flour 2 tbsp melted butter 1 tsp honey 1/4 tsp baking powder pinch of salt


1. Place all ingredients in a bowl and whisk until well combined. 2. Line a baking tray with baking paper and then place 4 equal portions of taco mixture on tray. It will look runny (bit like pancake batter) 3. Bake at 180C for 10 -12 minutes or until slightly golden. Place on cooling rack to cool slightly.

While tacos are cooking you can make the fillings.

For the meat you can choose anything that works for you, or go meat free by using a bean mix. I used lamb mince which I cooked in a frying pan with a little dash of olive oil, salt and onion relish.

To assemble coat centre of taco with herby mayonnaise. Then fill with mince, avocado, crumbed feta, chopped herbs, corn pieces, and onion slices.


Tip: see previous post for how to make homemade mayonnaise. Simply add chopped herbs to the mayo to get yummy dressing for tacos.
