Lemongrass Coconut Chicken Stir-fry

A winner dinner tonight! Had to share.....



Ingredients 1 stalk lemongrass (or use 2 tbsp of lemongrass paste) 2 cloves of garlic 1 tbsp grated ginger 2 tsp honey 1 tsp sea salt 2 tsp fish sauce zest of one lime or chopped up kaffir lime leaf 500g chicken breast, chopped 1 can coconut milk 1 tbsp olive oil 2 handfuls of broccolini, or broccoli 200g snow peas, trimmed juice of one juicy lime 1/4C chopped mint


Instructions 1. Blend lemongrass, garlic, ginger, honey, salt, fish sauce together. Mix through the chicken with 1/2C of coconut milk. Sit for 10 mins. 2. Heat a wok until hot, add oil. Cook chicken for 4 minutes until browned. Remove from pan. 3. Add broccoli and snow peas and cook for two minutes. 4. Add back the chicken, remaining coconut milk and lime juice. Toss quickly and then plate up.
