Finally I have a recipe that both my kids like! These little balls are delish ....
Even better, I discovered this cool trick for making them super easy to cook- cooking them in muffin trays with muffin liners. Gold!
Ingredients 1 courgette, grated 1 large carrot, grated 1 onion, finely chopped 500gm beef mince 1 tbsp Worcestershire sauce 1.5 tbsp tamari soy sauce 1/2C GF panko crumbs (also can use almond flour or GF bread crumbs) salt and pepper for taste 2 tbsp tomato paste (or use Simon Gaults tomato sauce) 1 egg
Instructions 1. Fry onions, carrot and courgette in a little olive oil until soft. 2. When veggies are cool, place in large bowl with remaining ingredients and mix well. 4. Shape into balls and place in lined muffin trays 5. Bake for 30 mins on 180C
Serve on their own with a side or go fancy with courgette noodles and a tomato passata.
Tips: - double the batch and freeze- make handy reheated meals on the go - Can use these as hamburger patties. Use baked portebello mushrooms as replacement for buns.
