Mediterranean Fish Dish

This dish reminds me of some the Croatian food that I grew up on. Simple ingredients, one pot, full of flavour and ready in 20 minutes. What's not to love?!


Ingredients 1 red onion, chopped 2 cloves garlic, crushed 1 tbsp freshly grated ginger 1 tbsp balsamic vinegar 2 tsp honey 2 tbsp tomato paste 1 jar of canned tomatoes 1 tsp of any dried herbs you have on hand - oregano or basil are great 2 chopped capsicums 2 chopped zucchinis 1/2C red or white wine salt and pepper 4 fillets of white fish handful chopped parsley


Instructions 1. Heat some olive oil in large pot and add onions and cook for few minutes until nearly soft. Then add balsamic vinegar and honey and cook for two more minutes. Next add in garlic, ginger, tomato paste, tomatoes, herbs, S&P, capsicums and zucchini. Cook for 5 minutes. Add in wine and then bring to a simmer. 2. Place fish fillets on top and cook for 10-15 minutes (lid off) until fish is cooked- you may need to carefully turn fish halfway. 3 When cooked, sprinkle with parsley and serve with mash spud or rice.
