The only problem with this dish is you cant stop eating it! OMG we gobbled this up tonight in seconds.. so much for 30 chews! Be sure to make extra- you going to need them.
Ingredients • 1 C Greek yogurt • 2 tbsp olive oil • 1.5 tsp paprika • 1 tsp cumin • 1 tsp red pepper flakes (optional if you don't like heat) • Zest and juice from one lemon • 1 tsp sea salt • Good grind of black pepper • 5 garlic cloves, crushed (love a bit of garlic!) • 700 grams of chicken thighs, cut into cubes • 1 large red onion, cut into wedges
Instructions 1. In a medium bowl, combine the yoghurt, olive oil, paprika, cumin, red pepper flakes, lemon zest, lemon juice, salt, pepper and garlic. 2. Thread the chicken onto skewers. Be sure not to cram the skewers. Place the kebabs in a dish and cover with the marinade, coating well. Cover and refrigerate for at least eight hours or overnight. 3. Cook skewers on grill plate or on BBQ for approximately 15 minutes or until chicken is cooked. Serve on a Greek salad for a perfect match.
