I am not exaggerating when I say this is the best prawn salad I have eaten!!!
Ingredients
1 lemon halved (for poaching)
2 tbsp cajun spice
1 bay leaf
5 garlic cloves
Prawn
1/2 cup chopped celery
Avocado diced
1 red pepper chopped
2 tbsp chopped dil
4 spring onion chopped
salt and pepper
Juice of one lemon (for dressing)
1/4 cup mayo
Instructions
Add water, one lemon (halved), garlic cloves and bay leaf to pot. Bring to boil and then poach prawn in water for 2-3 minutes- until cooked.
Drain prawn and then cool and chop.
Add all the ingredients to a bowl and mix.
Soooo good!!
