Pumpkin & Spice Coriander Soup

This soup is what converted me to eating pumpkins. Oh my god its delicious. Its decadent and creamy but actually really quick and easy to make. Within half an hour you could be doing what I am doing right now.... scoff scoff :-)

Ingredients 50 grams of butter 2 cloves, crushed 1 large onion, finely chopped 1 small pumpkin, peeled & chopped 500ml of chicken stock 500mls of cream (coconut milk will also be nice) 1 tbsp five spice 1 bunch of coriander (or 2 tbsp of ground coriander)


1. In large pot, cook onions in butter until soft. Add garlic and cook for one minute. 2. Add in pumpkin, coriander, five spice and cook for further five minutes. 3. Add in chicken stock, and turn up heat to reduce just slightly. 4. Add cream, and season with salt and pepper. 5. Blend until smooth. Done.
