Tomato Sausage Bake

A good old sausage bake is hard to beat! Love this simple recipe that can be prepped in 5 mins! The balsamic and tomato combo gives it an edgy sweetness that has you unable to avoid second helpings!

Ingredients 8-10 sausages 2 cups of chopped tomatoes, or cherry tomatoes (can also used canned tomatoes when out of season) A few sprigs of rosemary and thyme 2 bay leaves 1 tbsp dried oregano Splash of olive oil 1-2 tbsp of balsamic vinegar Pinch of salt and pepper


Instructions Place all the ingredients in one large oven proof dish. Bake for 30 mins on 180 C with lid on. Then flip sausages and cook for another 30 minutes without the lid on.

Serve with your favourite mash.
