Veg & Beef Meatballs

Having two kids that are very fussy eaters (I KNOW!!! How the hell did that happen to the biggest foodie ever!), has meant I have had to get creative with how I get their veggies in. This is one that I seem to get past the goalie. Give it a try its yummy!


Ingredients

  • 1 1/2 cups fresh broccoli florets

  • 1 large carrot roughly chopped

  • 1 1/2 cups baby spinach loosely packed

  • 2 stalks spring onions

  • 1 clove garlic

  • 3/4 tsp salt or to taste

  • 1/4 tsp pepper or to taste

  • 1 1/2 tsp Italian seasoning

  • 1 pound ground beef

  • 2 tbsp flax meal

Instructions

  • Preheat your oven to 200 degrees C

  • In a food processor, combine the broccoli, carrots, baby spinach, green onions, and garlic. Pulse until finely chopped.

  • Transfer the veggies to a large bowl and add the remaining ingredients. Time to get messy! Using your hands, mix the ingredients until everything is well blended.

  • Gently roll the meat into golfball size portions. Arrange the meatballs in a single layer in a large backing dish (you might need to use two baking dishes depending on how large they are).

  • Bake for 20-25 minutes or until meat is cooked through.

  • Enjoy with your favourite tomato sauce- I use my Roasted Tomato Soup.
