Vietnamese Chicken Rice Paper Rolls

Anyone else struggle to spell "Vietnamese"? What I didn't struggle with is eating these tasty little parcels!! A definite go to......YUMMMMMM!



Ingredients Rice paper sheets Chopped veggies of choice (I used cucumber, capsicum, cabbage, and carrots) Coriander and/or mint Chicken- either left over roast chicken or some cooked chicken (in thin slices). You can also choose to have no meat or swap with prawns.


Dipping Sauce 2 tbsp brown sugar 90mls freshly squeezed lime juice 70ml fish sauce 1 tsp soy sauce 1 garlic, crushed 2 chilies, thinly sliced

Instructions 1. Mix all the ingredients together for dipping sauce and set aside. 2. Soak rice paper sheets in warm water for 30 seconds. Place on tea towel and then add the veggies, chicken and coriander to center of rice paper. Fold the bottom edge of rice paper over the filling. Then fold sides and roll to enclose. Serve with dipping sauce.
