This one is for you Gina who just picked an incredible crop of aubergines today. This recipe only requires a few ingredients but packs a punch in terms of flavour. So YUM!
Ingredients 1 large aubergine (eggplant) olive oil salt & pepper garlic chargrilled capsicums 100 grams feta basil leaves
1. Chop the top and bottom off the aubergine and sit upright. Slice lengthways into 0.5cm thick slices. 2. Mix oil, garlic, and rosemary together and brush onto aubergine slices. Season with salt and pepper. 3. Grill aubergine slices on a grill pan or BBQ grill plate, about 3 minutes each side. They should be cooked through and soft. 4. Assemble by lying aubergine slice on flat surface and then topping with slice of chargrilled capsicum, basil leaves, and slice of feta. Roll tightly and repeat for remaining ingredients.
