This little beauty can be juiced, roasted, sautéed, pickled, and eaten raw. It is a worthy addition to any meal due to its many health benefits. Beetroot can help lower your blood pressure, fight cancer and inflammation, boost your stamina, and support detoxification.
Today I harvested some of my beetroot so made this delicious salad.
Ingredients 2 C cubed beetroot 2 C carrots, cut into thick batons 2-3 Tbsp maple syrup 3 Tbsp extra virgin olive oil 3 Tbsp balsamic vinegar 100 grams feta 1/4 C pinenuts 1/2 C chopped celery 3 chopped spring onions
Place beetroot and carrots in roasting tray and mix with olive oil, balsamic vinegar and maple syrup. Bake on 180C for 40-45 minutes.
When cooled add remaining ingredients. Drizzle with some balsamic glaze (optional).
