Blueberry Crumble Slice

Feeling like a weekend treat? This little number is the perfect healthy alternative. A good lunch box option for big and little people. Also freezes really well if you can manage to save some!

Ingredients 2 C oat bran 3/4C LSA (linseed, sunflower and almond, preferably blended fresh) 12 pitted fresh dates 1/2C coconut oil 2 tsp vanilla extract 3 1/2C frozen blueberries 2 tbsp maple syrup 2 tbsp chia seeds


1. Preheat oven to 160C 2. Place oat bran, LSA, dates, coconut oil, and vanilla in food processor and process until mixtures comes together. Set aside 1 cup of mixture. With remaining mixture press firmly into 20 x 30cm baking tin and bake for 15-20 minutes, or until lightly golden. 3. In meantime, place blueberries in pot with maple syrup and cook until blueberries break down. Then add in chia seeds and continue to cook until jam like in texture - about 10 minutes. 4. Pour the blueberry mix over base and top with reserved oat bran. 5. Bake for further 20 minutes. Cool in fridge and then slice into squares.

Serve on its own, or with yoghurt. YUM!
