Coriander Pesto


Ingredients 2 cups coriander (or blend with bit of parsley if bit short) 1/4 cup parmesan 1/4 cup toasted sunflower seeds 2 garlic cloves 1/2 tsp salt good grinding (that sounds a bit rude:-) of pepper 1/2 cup extra virgin olive oil (you may need more or less to get right consistency)


Instructions 1. place all ingredients, except oil, in food processor and pulse until all incorporated and chopped 2. slowly pour oil in until pesto is a chunky paste

Use to make a salad dressing, dip for crackers, or spiralise some zucchini's and use as a sauce. Options are endless...
