For me to eat pumpkin, it has to be disguised in a good sauce or soup. This recipe from Donna Hay ticks that box and is very moreish!
Ingredients 1 tbsp olive oil 1 small pumpkin, peeled, seeded and chopped into inch cubes sea salt and pepper 1/2 C onion relish (store bought) 100g crumbled feta 1/2C flaked almonds 3/4C cream
1. Heat frying pan with olive oil. Add pumpkin and splash of water. Cover and simmer for 10 minutes. 2. Remove lid and add remaining ingredients. Cook for further 10 minutes.
Very easy and very yummy!
