Pumpkin Seed, Kale and Avocado Dip

My beautiful sister in law turned 50 yesterday. Not that she looks a day over 30! If you want to look like her, than this dip will help you stay looking young! Haha healthy and delicious....

Ingredients 3 cups of torn kale leaves 1 cup pumpkin seeds 3 spring onions, sliced 1-2 avocados 1/2 tbsp lemon juice 1/2-1 tsp sea salt pepper 30g feta- goat or cow extra virgin olive oil micro herbs if feeling fancy


Instructions 1. Place kale in bowl and cover with boiling water. Sit for one minute. Drain well and place in food processor. 2. Place all the remaining ingredients in food processor and blend until smooth. 3. Transfer to serving bowl, top with feta, a drizzle of olive oil and some herbs.

Serve with seed crackers or veggie sticks.
