Rice pudding for breakfast!

My favourite old school dessert is rice pudding. SOOO GOOD. So when I discovered I could make a healthy version for breakfast in 4 minutes I was pretty excited!!!

I like to use whole milk but you could substitute with coconut milk or other nut milks.


Ingredients 2 C whole milk 2 tsp vanilla extract 1 heaped Tbsp ground almond 2 C brown rice flakes (available in the supermarket)


Instructions 1. Add all the ingredients to a pot and bring to a simmer (stirring throughout). 2. Take off heat and let rest for 2 minutes 3. Sprinkle with your choice of toppings. I love almond flakes, cinnamon and drizzle of maple syrup.


Serves 2 adults and 2 little ones.
