Salmon and Veggie Cucumber Boats

Need some inspiration for a quick tasty lunch? Then try this little number. If you are feeling exceptionally lazy you can mix any ingredients you enjoy or simply have with just salmon and mayo. Check out my older post for homemade mayo....


Ingredients: 1 small tin of wild caught salmon 1/4 cup chopped celery 1/4 cup chopped red capsicum 2 tbsp diced red onion 1/4 cup chopped broccoli 3 tbsp Greek yoghurt 1 tbsp mayo 1-2 cucumbers, halved lengthwise and seeded


Directions:

Combine tuna, celery, red onion, broccoli, yoghurt, and mayo in a medium bowl. Mix until everything is well incorporated.

Spoon into tuna boats and enjoy!
