Tomato Passata

Mum shared this recipe with me and it's too good not to share with everyone! If only you could smell my house right now!

Ingredients 2 KG chopped tomatoes 1 -2 red onions, quatered 12 cloves of garlic handful of chopped herbs (I used basil, oregano, thyme, rosemary, and parsely) salt & pepper 2 tsp brown sugar drizzle of apple cider vinegar big glug of extra virgin olive oil


Instructions 1. Place all ingredients on roasting tray and bake at 180C for 60 mins, or until caramelised. 2. Once cooled blend in a food processor to chunky or smooth, depending on what you like. You can bottle any excess and will last for 12 months.

Great for quick easy dinners. Throw over meatballs, into GF pastas, for baked chicken dishes or eat as a soup!
