Zesty Zuchinni Fritters

When I am pushed for time and I need a quick and purely delicious meal, I make fritters. They are perfect for breakfast, lunch, or dinner. SOOOO good!

Ingredients 500grams zucchini 1 cup peas 1 bunch of parsley, chopped 1 bunch of mint, chopped 4 spring onions, finely chopped 100g of crumbled feta good pinch of sea salt and pepper zest from one lemon 3 eggs 1/2 cup almond flour- or more to make batter consistency


1. Grate zucchini and mix in small pinch of sea salt. Let sit in colander for 10 mins. Squeeze out moisture with hands. 2. Place zucchini and all the other ingredients in a bowl. Mix until well combined. 3. Cook fritters in a little olive oil.


Serve with squeeze of lemon juice, some smashed avocado and a little more crumbled feta. I also sometimes add some homemade mayo with some turmeric mixed through.
