This salad is a crowd pleaser! Full of flavour that is great on its own or as a side dish. Who said healthy couldn't be easy and bloody delish!!
Ingredients • 1 C cherry tomatoes, halved • 3 large corns cooked, and kernels sliced off • 2 avocados peeled, pitted and sliced • ½ red onion (medium) thinly sliced • Big bunch of coriander, chopped • 2 Tbsp extra virgin olive oil • 2 Tbsp lime juice from 1 to 2 limes • 2 garlic cloves, crushed • ½ tsp salt • Good grinding of black pepper
Instructions 1. In a large salad bowl combine tomatoes, corn kernels, avocado, red onion, and coriander 2. Mix remaining ingredients together to form dressing. Toss the salad gently just until combined and serve.
Tip: You can use frozen or canned corn if you dont have fresh corn. You can also grill whole corn to give it extra flavour.
