Blueberry Pancakes

After doing 5 days on a fasting mimicking diet I was pretty excited to make my first meal this morning!!! And what a better way to use my freshly picked blueberries than with some pancakes! If you dont have fresh blueberries you can use frozen- just defrost first and drain off the excess water.

Ingredients 3/4 C buttermilk (or milk with 2 tbsp of white vinegar added to it) 1 C flour of choice 2 tbsp coconut sugar (or raw caster sugar) 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 egg 2 tbsp melted butter 1 C blueberries


Instructions 1. Whisk dry ingredients together. 2. Whisk the egg, buttermilk, and butter into dry ingredients until just combined 3. Heat pan and add a little butter. Pour 1/3 C mixture into pan and spread it until flat. Arrange a few blueberries on top. Cook until see bubbles on top and then then flip and cook for further minute.


Serve with maple syrup or a blueberry topping. I made a blueberry topping by cooking some blueberries in water, maple syrup, cinnamon, vanilla essence and a then added a little tapioca flour at the end to thicken up.
