Chocolate & Raspberry Granola

Being Easter weekend it calls for a bit of chocolate indulgence. What better way to start the day than with this delicious number....

In a large bowl mix following: 1 cup amaranth puffs 1 cup quinoa puffs 1 cup coconut chips 1/2 cup almond slices 1/2 cup almond flour 1/2 cup sunflower seeds 1/2 cup pumpkin seeds 1/2 cup chia seeds 1/8 cup flax seeds 1/4 cup cashews 1 cup whole oats


In a pot heat and mix until melted: 1/3 cup date syrup (can use maple syrup too). 1/2 cup coconut oil 1/2 cup cacoa powder 1 tsp vanilla paste (or use vanilla extract)

Add liquid mix to dry mix bowl, and mix until well incorporated.

Place on baking tray and bake for 15 mins, turning regularly to ensure it doesn't burn.


Once cooled, mix in 30grams of freeze dried raspberry powder. If you feel extra indulgent add some freeze dried black doris plum pieces too.


All ingredients are available from your supermarket.
