Poke Bowl

This dish won the best meal on camp. Its so delicious I could eat it every day of the week. Thanks Scotty for letting us replicate this back home. YUM!

Ingredients: Red cabbage, sliced Red capsicum, chopped Cucumber, peeled and chopped Avocado, diced, Radish, sliced thinly (optional) Cherry tomatoes, quartered Lemon juice Olive oil White fish, chopped into 1.5cm cubes (I used tarakihi but you could use kawhai, snapper or whatever you have at hand- couple of days old is best) Sesame oil Chilli, chopped finely (optional) Soy sauce Pepper Wasabi Mayo (mix mayo with wasabi paste)


Instructions: 1. Two hours before eating marinate the fish. Place chopped fish in a dish with sesame oil, lemon juice, soy sauce, chilli, and pepper. For 2 big pieces of fish I used 1 tsp sesame oil, 1.5 tbsp of soy sauce, 2 squeezed lemons, and one small chilli. 2. Prepare the slaw by mixing all the veggies with lemon juice and olive oil (I used one lemon to 4 tbsp of olive oil) 3. Assemble by placing slaw in bowl, topped with fish and wasabi mayo. Serve with some chopped coriander.
