Not sure about you guys but when it gets cold I get a little more peckish. I also have a daughter that constantly asks to eat! For those hungry moments when you feel like a little something extra, this nut and seed mix will hit the spot.
Ingredients 1 C hazelnuts, unsalted 1 C almonds, raw and unsalted 1/2 C pumpkin seeds 1/2 C sunflower seeds 1/4 C brazil nuts 1/4 C amaranth (optional) 1/4 C maple syrup 1 big tbsp black strap molasses 1 tbsp coconut oil 1/2 tsp cayenne pepper (optional) 1 tsp cumin powder 1 tsp ground ginger 3/4 tsp sea salt 1 tsp ground cinnamon
1. Preheat oven to 180C 2. In small bowl, mix maple syrup, molasses, spices and seasoning 3. In large bowl combine the nuts, seeds, and amaranth 4. Pour the liquid mixture over nuts and seed mix and stir through until thoroughly coated 5. Line a baking tray and then spread nut mixture over to ensure even cooking. 6. Put in oven and bake until lightly toasted. Check often as they can burn quickly. Believe me I know! 7. Take out of oven and let cool completely. Store in airtight container. Will keep for months.
